Dijon Beets


2 (8.8-oz.) pkgs. Love Beets (organic all-natural cooked
          beets with no added colors or preservatives)
1 Tbsp. Dijon mustard (or whole-grain mustard)
2 Tbsp. lemon juice
1 Tbsp. apple cider vinegar (or balsamic vinegar)
1 tsp. dried dill weed

Slice beets into 1/4-inch slices.

Whisk remaining ingredients in a small bowl.

Pour over beets.

Stir to combine.

Serve warm or let marinate in the fridge for a couple hours.

Makes 4 servings.
