Vegan Chili

Vegan Chili

1 cup low sodium vegetable broth
1 1/2 cups diced celery
1 (28-oz.) can tomato puree or tomato sauce
2 (15-oz.) cans diced tomatoes
1 (15-oz.) can cannellini beans, rinsed and drained
1 (15-oz.) can red kidney beans, rinsed and drained
1 (15-oz.) can black beans, rinsed and drained
1 (15-oz.) can garbanzo beans, rinsed and drained
1 1/2 Tbsp. chili powder
1/2 tsp. red pepper flakes
1 tsp. cumin
1/4 tsp. Simply Organic All-Purpose Seasoning
1/4 tsp. black pepper
1 (10-oz.) bag frozen sweet organic corn

Simmer for 30 minutes until hot and bubbly.

Serve alone or over cooked brown rice or cooked whole grain pasta.

Makes about 8 servings.
