Curried Chickpea Salad with Apples and Raisins


1/2 cup Our Hummus (click here)
1 1/2 tsp. curry powder
1 (15-oz.) can chickpeas, drained and rinsed
2 Tbsp. lemon juice
1 tsp. thyme
1 Tbsp. dried parsley
1 cup chopped Braeburn apple
1/2 cup diced celery
1/4 cup raisins

Combine hummus and curry powder stirring with a whisk until
well blended. Set aside.

Add chickpeas to a large bowl. Season with the lemon juice,
thyme, and parsley. Mix well to coat the chickpeas.

Add the apple, celery, and raisins and gently mix to combine.

Pour blended hummus over the salad and stir mixture well to combine.

Cover and chill.

Makes 2-3 servings.
