Fiesta Bean Salad


1 (15-oz.) can no-salt-added garbanzo beans,
          rinsed and drained
1 (15-oz.) can no-salt-added black beans,
          rinsed and drained
3 Roma tomatoes, chopped
1/2 small red onion, chopped
1/3 cup cilantro/parsley, chopped
1/2 cup frozen organic corn, thawed
Dressing:
          3 Tbsp. lime juice
          1-2 cloves garlic, minced
          3/4 tsp. cumin
          1/4 tsp. Simply Organic All-Purpose Seasoning

Make the dressing: in a small bowl, add all ingredients and
whisk to combine. Set aside.

Rinse and drain beans. Add to a medium bowl.

Dice tomatoes, roughly chop cilantro/parsley, and finely dice
red onion. Add to the beans along with the corn.

Pour dressing over bean mixture and stir.

Can serve immediately or chill for at least an hour.

Makes 3 entree servings.
