German Potato Salad


2 pounds Yukon Gold potatoes
1/2 large yellow onion, peeled and thinly sliced
1/3 cup apple cider vinegar
1/2-1 tsp. smoked paprika
1 tsp. Simply Organic All-Purpose Seasoning
1/2 tsp. coarsely ground black pepper (or more, to taste)
1/4 cup chopped fresh parsley leaves

Add potatoes to a large stockpot and cover with cold water that
extends at least 2 inches above the potatoes. Bring to a boil
over medium-high heat. Reduce heat to medium, and continue
cooking until potatoes are tender when pierced with a fork,
about 15-20 minutes.

Add onions to a saute pan and cook in 2 Tbsp. cooking liquid
(water, broth, etc.) for 5 minutes, stirring occasionally, until
cooked and translucent. Remove from heat.

When the potatoes are cooked, drain them and cut into 1-inch
cubes. Add potatoes to serving bowl, and top with onions,
vinegar, smoked paprika, all-purpose seasoning, and pepper. Toss
to combine. Serve topped with fresh parsley.

Makes 3-4 servings.
