Easy Oatmeal Raisin Cookies
(Healthy Breakfast Cookies)
2 cups rolled oats
1 tsp. cinnamon
1 Tbsp. pumpkin pie spice (see note below)
4 Tbsp. organic ground flaxseed meal
2 tsp. alcohol-free vanilla extract
4 ripe bananas, mashed
1/2 cup raisins
1/2 cup frozen or fresh blueberries
Preheat oven to 350 degrees F.
Combine dry ingredients in a large bowl, and then stir in
mashed banana and vanilla extract.
Mix well to incorporate all of the dry ingredients, and then
stir in raisins and berries.
Drop onto a silicone or parchment paper-covered baking sheet
and bake for 20 minutes.
Makes 2 dozen cookies.
NOTE: Cocoa powder can be added also for a chocolate
flavor. Fresh/frozen cranberries can be substituted for the
To make pumpkin pie spice, mix together 2 teaspoons
cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon ginger, and 1/4
teaspoon cloves and add to the other dry ingredients (oats,
cinnamon and flaxseed meal).
This recipe is a good travel breakfast since it is all healthy.
